Healthy Banana and Chocolate Chip Bread- SO Yummy!

Our fluffy and moist banana and chocolate chip bread is a perfect as a on-the-go breakfast bar or snack and perfect for satisfying that sweet tooth! This banana bread is delicious, easy to make and healthy (although you'd never know that!)

After trying every diet on the planet and having to cut out refined sugar, gluten, dairy, wheat, yeast and soya I was losing hope of ever being able to eat anything yummy ever again. I began playing about with recipes from the internet, swapping in alternatives to see what worked and what didn't. I finally created this delicious recipe by chance and by god was I happy! This recipe automatically cured my sweet tooth cravings and I couldn't resist going back for more and feeling guilt free about doing so. Even my boyfriend who isn't into healthy foods keeps stealing my banana bread bars as he can't resist them either!


Healthy Banana and Chocolate Chip Bread


Ingredients:

(Everything is an estimation. If you do not have 1 or 2 ingredients or don't like certain things, play about with it- the recipe will probably still work and taste great!)

  • 2 large eggs

  • 1/4 cup coconut oil

  • 1/3 cup coconut sugar

  • 2 medium bananas- the riper the better!

  • 1 tsp vanilla extract

  • 1 cup GF flour (coconut flour works)

  • 1/2 cup blanched almond flour

  • 1/3 tsp himalayan salt

  • 1/2 tsp baking powder

  • 1 tsp GF baking soda

  • 1-3 tsp cinnamon (depends on liking)

  • 1/3 cup raw cacao chocolate chips

  • 1/2 cup walnuts, hazelnuts or any nut of choice

  • a dash of coconut milk

  • OPTIONAL: honey, 1 banana, cacao chocolate chips, nuts or nut butter of choice for topping

Directions:

  1. Preheat the oven to 180'C and line a baking tray with 1 sheet parchment paper.

  2. In a large bowl mash the bananas. Next, add the eggs and stir together. add the GF flour, almond flour,GF baking soda, cinnamon, baking powder and Himalayan salt and whisk all ingredients together.

  3. Add the coconut sugar, melted coconut oil and vanilla extract to the bowel and mix again until smooth.

  4. Add the cacao chocolate chips and nuts of choice to the bowel and mix in.

  5. Add batter to the parchment paper and spread the mixture in an even layer over the top.

  6. Optionally, top the banana bread with 1 chopped banana sliced horizontally, nuts of choice, nut butter of choice, more cacao chocolate chips and/or a drizzle of honey.

  7. Bake in the oven for 22-25 minutes (until browned on-top).

  8. Remove the banana bread from the oven and set aside to cool for 10 minutes. Slice the bread into chunks and Voila! Your delicious snack is ready. Serve immediately or store in an airtight container for up to 1 week.
